500g granulated sugar

To prepare the Syrup: Place all the items in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Then, take off the heat and leave to reach room temperature completely. Transfer to a sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for around a month.

To make Premix: Mix all the liquid ingredients into one sizeable container, leave to sit for 60 minutes, then strain preferably using cheesecloth, making it fully clarified.

When ready to serve: Add 85ml from the batch mix into a cocktail shaker containing ice, and stir gently for one minute to chill. Filter into a frosted cocktail glass or equivalent, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
